Result: a curried potato-sweetcorn soup
- Fry an onion in some oil (I love the smell of fried onions!)
- Add cubed potatoes, water and a coconut milk
- Add spices (I used curry, tikka spice blend, cumin seeds and vegetable stock)
- Bring to the boil
- Add sweetcorn (tinned or frozen)
- Once potatoes are cooked, put into food processor and mix until smooth consistency
I didn't follow a specific recipe, so I am afraid I can't tell you how much exactly I used of each of the ingredients.
