Pantry cooking

Too hot to go shopping. So, I had to fabricate something from the (limited) stuff I have in the flat.
Result: a curried potato-sweetcorn soup
  • Fry an onion in some oil (I love the smell of fried onions!)
  • Add cubed potatoes, water and a coconut milk
  • Add spices (I used curry, tikka spice blend, cumin seeds and vegetable stock)
  • Bring to the boil
  • Add sweetcorn (tinned or frozen)
  • Once potatoes are cooked, put into food processor and mix until smooth consistency

I didn't follow a specific recipe, so I am afraid I can't tell you how much exactly I used of each of the ingredients.

served with cooked ham
